Cinnamon Applesauce

6 medium apples (about 1.1–1.3 kg), peeled, cored, and chopped
(Use a mix of sweet and tart varieties for best flavor.)½ cup (120 ml) water
2 tbsp fresh lemon juice
1½ tsp ground cinnamon
Directions
- Prep the apples
Peel, core, and chop apples into evenly sized chunks - Simmer
Add apples, water, and lemon juice to a heavy saucepan.
Bring to a gentle simmer over medium heat. - Cook until soft
Cover and cook for 15–20 minutes, stirring occasionally, until apples are very tender and beginning to break down. - Mash or blend
For a rustic texture: mash with a potato masher.
For smooth applesauce: blend with an immersion blender until silky. - Season
Stir in cinnamon, nutmeg, vanilla, and salt.
Taste and adjust sweetness or spice as needed. - Finish cooking
Simmer uncovered for another 3–5 minutes to thicken slightly. - Cool
Let cool before serving. The sauce will thicken more as it rests.
