Ingredients

  • 250 g fresh strawberries (hulled)

  • 1–2 tsp honey (optional)

  • 2 tbsp chia seeds

  • 1–2 tsp fresh lemon juice (for natural brightness & preservation)

Directions

  • Cook the strawberries
    Add strawberries to a small saucepan over medium heat. Cook for 5–7 minutes, stirring occasionally, until softened and juicy.
  • Mash
    Use a fork or potato masher to break down the strawberries to your desired texture (smooth or chunky).
  • Balance flavor
    Stir in lemon juice and a small amount of honey/maple syrup if needed, keep it subtle.
  • Add chia seeds
    Remove from heat and mix in chia seeds.
  • Set naturally
    Let sit 10–15 minutes to thicken without added sugar or pectin.
  • Cool & store
    Transfer to a jar, cool fully, and refrigerate.
