Yogurt Bundt Cake with Raisins & Walnuts

1 cup plain yogurt
3 eggs
1 cup sugar
½ cup olive oil
2 cups all-purpose flour
2 tsp baking powder
Pinch of salt
½ cup raisins
½ cup walnuts, chopped
Directions
- Preheat oven
Preheat to 180°C Line a loaf pan with parchment paper or grease a bundt pan. - Mix wet ingredients
In a large bowl, whisk yogurt, eggs, sugar, and oil until smooth and creamy. - Add dry ingredients
Sift in flour, baking powder, and salt. Mix gently until just combined. Do not overmix. - Fold in raisins & walnuts
Toss them lightly in flour, then fold into the batter. - Bake
Loaf pan: 35–45 minutes
Bundt pan: 40–50 minutes
Bake until golden and a toothpick comes out clean. - Cool
Let cool in the pan for 10–15 minutes, then transfer to a rack to cool completely.
Notes
- Coating raisins in flour prevents them from sinking
Don’t overbake, this cake should stay moist
You can swap walnuts for almonds or skip nuts entirely
