Yogurt Bundt Cake with Raisins & Walnuts

Ingredients

  • 1 cup plain yogurt

  • 3 eggs

  • 1 cup sugar

  • ½ cup olive oil

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • Pinch of salt

  • ½ cup raisins

  • ½ cup walnuts, chopped

Directions

  • Preheat oven
    Preheat to 180°C Line a loaf pan with parchment paper or grease a bundt pan.
  • Mix wet ingredients
    In a large bowl, whisk yogurt, eggs, sugar, and oil until smooth and creamy.
  • Add dry ingredients
    Sift in flour, baking powder, and salt. Mix gently until just combined. Do not overmix.
  • Fold in raisins & walnuts
    Toss them lightly in flour, then fold into the batter.
  • Bake
    Loaf pan: 35–45 minutes
    Bundt pan: 40–50 minutes
    Bake until golden and a toothpick comes out clean.
  • Cool
    Let cool in the pan for 10–15 minutes, then transfer to a rack to cool completely.

Notes

  • Coating raisins in flour prevents them from sinking
    Don’t overbake, this cake should stay moist
    You can swap walnuts for almonds or skip nuts entirely
