Homemade Pepperoni Pizza

For the dough:
Make your favourite homemade pizza dough. Find my full recipe hereFor the topping:
2 tablespoons olive oil200 g good quality tomato passata or crushed tomatoes
200 g mozzarella, sliced or shredded
80–100 g pepperoni slices
Salt & freshly ground black pepper
Fresh basil leaves (for garnish)
Optional: a pinch of chilli flakes
Directions
- Preheat the oven to 250 °C . Place a pizza stone or heavy baking tray inside to heat.
- Prepare the dough: On a lightly floured surface, roll out your pizza dough to your desired thickness. Transfer it onto a piece of parchment paper for easy handling.
- Add the sauce. Spread the tomato passata evenly over the dough, leaving a small border for the crust.
- Top it off . Scatter the mozzarella pieces, then layer on the pepperoni slices. Add a few torn basil leaves and a drizzle of olive oil.
- Bake. Slide the pizza (on the parchment) onto your hot pizza stone or baking tray. Bake for 12–15 minutes, until the crust is golden and the cheese is bubbling.
- Finish & serve. Remove from the oven, season with a touch of sea salt and freshly cracked pepper, and let it cool for a minute. Slice and enjoy while warm.

Notes
- For an extra touch, brush the crust edges with a little olive oil mixed with garlic before baking. It gives a lovely golden shine and aroma.
