Ingredients


  • 200 g noodles (Mercadona)

  • 200 g sliced mushrooms (laminado – Mercadona)

  • 200 g cooked shrimp (Mercadona)

  • 1 yellow bell pepper, thinly sliced

  • 2 tablespoons soy sauce

  • 1 tablespoon olive oil

  • 1 egg

  • 1 pinch ras el hanout

  • Salt and black pepper to taste

Directions

  • Cook the noodles
    Cook the noodles according to the package instructions. Drain and set aside.
  • Cook the vegetables
    Heat the olive oil in a large skillet or wok over medium-high heat.
    Add the sliced mushrooms and cook for about 3–4 minutes until they start to brown.
  • Add the pepper
    Stir in the sliced red bell pepper and cook for 2–3 minutes until slightly softened.
  • Add shrimp and seasoning
    Add the cooked shrimp, soy sauce, and a small pinch of ras el hanout. Stir everything together and cook for about 2 minutes to heat the shrimp through.
  • Add the noodles
    Add the cooked noodles to the pan and toss well so they absorb the sauce.
  • Finish with egg
    Push the noodles to one side of the pan. Crack the egg into the empty space and scramble it quickly.
    Once cooked, mix the egg into the noodles.
  • Serve
    Taste and adjust with a little more soy sauce or pepper if needed. Serve immediately.

Notes

  • Because the shrimp are already cooked, add them near the end so they don’t become rubbery.
    A small pinch of ras el hanout adds warmth and depth without overpowering the dish.
    You can add green onions or sesame seeds for garnish if you have them.
