100 ml extra-virgin olive oil
8 large prawns (gambones)
8 mussels, cleaned
8 baby squid (chipirones), sliced or chopped
Salt, to taste
½ onion, finely chopped
2 garlic cloves, minced
½ red bell pepper, diced
½ green bell pepper, diced
1 ripe tomato, finely grated
1 tsp sweet smoked paprika (Pimentón de la Vera)
5 saffron threads, lightly crushed
1 L hot seafood stock (homemade or light store-bought)
Directions
- Prepare the mise en place.
Clean and prepare all seafood. Have vegetables finely diced and tomato grated. If you’re ambitious, use prawn shells to craft your own flavorful stock. - Toast the rice.
In your paella pan over medium heat, warm the olive oil. Quickly stir in the paprika (be cautious—not to burn!), then immediately add the rice. Gently stir until each grain glistens with flavor. This “nacaring” step ensures the rice holds its shape later. - Add stock, saffron and mussels.
Pour in the hot seafood stock (never cold!) and scatter saffron threads. Give it just one gentle stir, then nestle in the mussels. - Cook without stirring.
Let everything simmer gently: 10 minutes over medium-high heat, followed by 5 minutes on medium-low, without stirring. This helps form the beloved socarrat. - Garnish and rest.
Remove mussels to the sides for a pretty presentation. Return the prawns to the pan. Turn off the heat and let the paella rest for 5 minutes before serving.
Notes
- Seafood stock matters: If you can, make it with prawn heads, fish bones, and vegetables. If not, use a low-sodium packaged stock.
Don’t sit on the recipe: Resist stirring the paella after adding the broth. Raise the heat near the end and listen—if it starts crackling, you’re approaching perfect socarrat.
Room for creativity: You can add clams, langoustines, or even crayfish, just keep balance in mind.
