Marinated Tomato Bruschetta

300 g cherry or grape tomatoes, quartered
2 tbsp extra virgin olive oil
1 small garlic clove, finely minced
A pinch of sea salt
Freshly ground black pepper, to taste
A few basil leaves, torn by hand
6–8 slices of rustic bread (sourdough or ciabatta)
Optional: drizzle of olive oil for toasting, and a touch of flaked salt before serving
Directions
- Marinate the tomatoes
In a bowl, combine tomatoes, olive oil, garlic, salt, and pepper. Toss gently to coat. Let rest for 20 minutes at room temperature, this allows the tomatoes to release their juices and become beautifully flavourful. - Toast the bread
Brush each bread slice lightly with olive oil and toast or grill until golden and crisp on both sides. - Assemble
Spoon the marinated tomatoes over the warm toast. Scatter torn basil leaves on top. - Serve immediately
Best enjoyed as soon as it’s made, when the bread is still crunchy and the tomatoes are glistening.
