Rustic Apple Yogurt Cake – Bread Maker Method

Ingredients

  • 2 yogurt-cup measures of brown sugar (use one of the yogurt pots to measure)

  • 3 large eggs

  • ½ yogurt-cup of extra virgin olive oil (EVOO)

  • 2 natural (plain) yogurts

  • 3 yogurt-cup measures of gluten-free flour (or regular flour if not gluten-free)

  • 1 packet (≈12 g) baking powder

  • 2 apples, peeled and thinly sliced

  • 1 tsp cinnamon (optional, for warmth)

  • 1 tbsp brown sugar (for sprinkling on top)

Directions

  • Mix the batter
    In a large bowl, whisk the eggs, brown sugar, olive oil, and yogurts until smooth.
    Add the flour and baking powder, mixing until fully combined. The batter will be slightly thick and creamy.
  • Add the apples
    Pour in half of the batter. Layer half of the apple slices over the batter. Pour in the remaining batter and top with the rest of the apples.
    Sprinkle with cinnamon and brown sugar for a golden, caramelized finish.
  • Bake
    Place the pan in the bread maker and select the Bake program (on the Lidl model, that’s Program 15, low browning).
    The baking time is about 1 hour.
  • Rest and cool
    About 15 minutes before the end, turn off the machine (don’t open the lid). Let it rest with the lid slightly lifted for 10 minutes to avoid sudden cooling and deflating.
  • Serve
    Carefully remove the pan, let the cake cool completely, then unmold.

Notes

  • Serve your apple yogurt cake warm with a drizzle of honey or a dollop of Greek yogurt.
    For extra charm, dust with powdered sugar before serving.
