Ingredients

  • 1½ cups all-purpose flour

  • ½ tsp baking powder

  • 1 tbsp sugar

  • ½ tsp salt

  • 1¼ cups milk

  • 1 egg

  • 3 tbsp unsalted butter, melted

  • 1 tsp vanilla extract (optional

Directions

  • Mix dry ingredients: In a large bowl, whisk together flour, baking powder, sugar, and salt.
  • Combine wet ingredients: In a separate bowl or large measuring cup, whisk milk, egg, melted butter, and vanilla
  • Make the batter: Pour the wet ingredients into the dry. Stir gently until just combined, a few lumps are okay.
  • Heat & cook: Warm a nonstick skillet or griddle over medium heat. Lightly grease with butter or oil.
  • Pour & flip: Use ¼ cup of batter per pancake. Cook until bubbles form on the surface, then flip and cook until golden.
  • Serve warm: Stack high and top with butter, syrup, or fresh berries.

Notes

  • Don’t overmix: a light stir keeps them fluffy.
Use buttermilk for extra tang and rise.
For perfectly round pancakes, cook on low–medium heat and let the batter spread naturally.

These fluffy pancakes are a weekend favorite: quick to make, endlessly customizable, and always a comfort. Whether stacked high with syrup or served with a handful of berries, they’re the kind of breakfast that turns an ordinary morning into something worth savoring.
