Ingredients

  • 2 medium sweet potatoes, peeled and cut into thin fries

  • 1 tablespoon olive oil

  • 1 teaspoon sea salt

  • ½ teaspoon garlic powder

  • ½ teaspoon smoked paprika

  • Freshly ground black pepper, to taste

  • Optional: chopped fresh rosemary or thyme

Directions

  • Preheat the oven to 220°C. Line a baking sheet with parchment paper.
  • Prep the fries: In a large bowl, toss the sweet potato fries with olive oil, salt, paprika, and pepper until evenly coated.
  • Spread evenly: Arrange in a single layer on the baking sheet, leaving space between each fry for even crisping.
  • Bake for 25–30 minutes, flipping halfway through, until golden and slightly crisp on the edges.
  • Serve warm with a side of homemade aioli, herbed yogurt, or your favorite dipping sauce.

Notes

  • For extra crispiness, soak the cut fries in cold water for 30 minutes before baking, then pat dry thoroughly.
